Red Potato Casserole
Yield: 6-8 servings
Ingredients:
- 8 medium red potatoes, peeled and diced
- 3 cups Cheddar cheese
- 1/2 stick butter or margarine, melted
- 1 pint (2 cups) sour cream
- 1/3 cup green onions, chopped
- 1 tsp salt
- 1 tsp pepper
Directions:
- Boil potatoes until tender but firm
- Combine cheese, butter, sour cream, onions, salt and pepper
- Gently fold mixture into potatoes
- Pour mixture into 13x9 inch baking dish
- Bake 350° for 30 - 40 minutes or cook in crockpot High 3-4 hours.
